The Best Candy Lollipop Molds

There are animals, party and holiday themes, and many kid-friendly designs that you may find useful. Just the thing for creating singularly special lollipops for school events, parties and even fund raisers.

The lollipop mold that is most commonly used in candy making is a flat candy mold, which is one of the three most common types of candy molds. Searching craft stores, cooking supply stores and online will turn up almost any design one might desire. A candy lollipop mold will differ from the normal flat candy mold only in that it will have an insertion point for a stick. There are also lollipop molds which take the form of a circular clip which can be released when the candy has cooled, and have an opening for the stick.

Ease of use is the key to most flat candy molds. They are not expensive, and are often available with an assortment of designs on one mold. Using these, you can get a variety of shapes without making a huge batch.

The process is just like that of other hard candies. The hot liquid lollipop mix is poured into the mold, is allowed to cool and set, and then the mold is upended and tapped on the bottom to extract the lollipops. The result will be, as the name implies, flat on at least one side, with a design on the other. Some dedicated candy lollipop molds will be flat on both sides for the traditional lollipop look.

A 3D candy lollipop mold, as the name implies, has an overall shape to it, and is not flat on one side. They come in two pieces for a particular design, front and back. The procedure is a little more 3D molded lollipopcomplicated. The candy is poured into one side of the mold, almost to the top, and set aside to cool. The other side of the mold is also filled; to within a quarter inch from the top, and when it is almost hard, the first, cooled side is extracted from the mold and mated to the second side.

If it has hardened a little too much, some corn syrup applied to the facing parts will normally help it set properly. There are 3D molds which are one piece; they require folding together the two sides when the candy is at the right degree of hardness.

The last type of mold used in candy making is not normally used for candy lollipop molds, and is called a hollow mold. When you want to make filled candies, a hollow mold is what you will want. Hard candies are not typically filled, so chocolate is the most commonly used confection for a hollow mold. Filled chocolates are very popular, and can be made with ganache, peanut butter, caramel, and cream or liquid fillings like cherry. And, of course, putting one kind of chocolate inside a different type chocolate jacket is a killer idea!

Using chocolate molds is an iterative process, in which you paint the interior of the mold with melted chocolate using a small brush, and then chill it until the chocolate hardens enough to add the next layer. Refrigerate only until cold – over cooling causes the chocolate to sweat when the temperature goes up. After repeated paintings, the chocolate is ready to fill when you can hold it up to the light, and see only chocolate, no light. Filling the chocolates with the prepared mixture is quick and easy, and then you are ready to seal the bottom with more chocolate. Cool once more for the final hardening and you have created delicious filled chocolates!
